Garlic Scape Pesto
I got the original recipe online but now I can't remember where, I did make a few adjustments however but it has quite a strong garlic taste overall. It is great with pasta or noodle dishes or works well as a spread. My guess it keeps for about a week or so, so best made for parties.
1.5 cups scapes, rough chopped
1/2 cup packed fresh basil
1 cup packed fresh organic spinach
1/3 cup cashews
Juice from 1 organic lemon
1/2 tsp sea salt
2 tsp balsamic vinegar
1/2 cup olive oil
Pepper to taste (optional)
1 tsp agave nectar
Mix all ingredients well in a food processor, until smooth. Add as much olive oil as you prefer to give it a creamy consistency but not too creamy that it is runny (can add more or less then 1/2 cup).
Makes about 1.5 cups
